A 130 m² retail space in a listed building was to be converted into a bakery and café.

The brief comprised a production area with cooling chambers and furnaces, as well as a salesroom and café.

The basic design strategy for the café and shop was to create a flexible, stage-like environment, with various components (bread shelves, containers, tables) which “could be wheeled into different spacial layouts”.

This allows for various uses of the space, such as public tastings, workshops, and events.
